Description

Whipped Ricotta Crostini is a delightful appetizer featuring toasted baguette slices topped with creamy, whipped ricotta mixed with fresh herbs and garlic, finished with a fresh cherry tomato topping. This easy-to-make recipe combines crunchy bread, smooth ricotta, and vibrant tomatoes for a perfect bite-sized snack or party starter.

Ingredients

Scale

Bread

  • 1 French baguette, cut into ½-inch slices

Tomato Topping

  • 1 cup cherry tomatoes (assorted colours), diced
  • ½ tablespoon olive oil
  • ¼ teaspoon salt
  • ¼ teaspoon ground black pepper

Whipped Ricotta

  • 1 cup whole milk ricotta
  • 1 tablespoon good quality extra virgin olive oil (plus more for serving)
  • ½ teaspoon honey
  • 1 + ½ tablespoons fresh herbs (such as basil, mint, thyme, oregano, or chives), finely chopped
  • 1 small clove garlic, minced
  • ½ teaspoon salt

Instructions

  1. Preheat and Toast Bread: Preheat your oven to 350°F (175°C). Arrange the sliced baguette in a single layer on a large half-sheet baking pan. Toast in the oven for 8-10 minutes until the bread is lightly golden and crisp.
  2. Prepare Tomato Mixture: In a small bowl, combine the diced cherry tomatoes with olive oil, salt, and ground black pepper. Toss gently and set aside to allow the flavors to meld.
  3. Make Whipped Ricotta: In a medium bowl, add the whole milk ricotta, olive oil, honey, finely chopped fresh herbs, minced garlic, and salt. Using a hand mixer on medium speed, whip the mixture until smooth and creamy, about one minute. Alternatively, blend them together in a food processor until velvety.
  4. Assemble Crostini: Spoon a generous dollop of the whipped ricotta onto each toasted baguette slice. Top each with a spoonful of the tomato mixture for a fresh, flavorful finish.

Notes

  • You can customize this crostini by replacing the tomato topping with other options such as fresh fruit, grilled vegetables, pitted olives, or additional fresh herbs.
  • For added flavor, drizzle extra virgin olive oil on top before serving.
  • Use a variety of fresh herbs like basil, mint, thyme, oregano, or chives to suit your taste preferences.
  • This recipe makes about 12-16 servings depending on the size of the baguette slices and the amount of toppings used.
