Ingredients
Scale
For the Cranberry Sauce
- 1/2 cup fresh cranberries
- 2 tablespoons pomegranate juice
- 1 tablespoon sugar, honey, or maple syrup
- 1/2 teaspoon fresh lemon zest
For the Spread
- 1 (11 ounce) goat cheese log, softened
- Pinch of salt and pepper
For Garnish and Serving
- 2 tablespoons pomegranate arils
- Fresh rosemary
- Bread, crackers, and/or chips
Instructions
- Make Cranberry Sauce: Combine fresh cranberries, pomegranate juice, sugar (or honey/maple syrup), and lemon zest in a saucepan over medium heat. Cook, stirring occasionally, until the cranberries break down and the mixture becomes thick and saucy, about 10 minutes. Remove from heat and transfer to a bowl to cool completely.
- Whip the Goat Cheese: In the bowl of a food processor, pulse the softened goat cheese until it starts to come together. Then blend continuously until very smooth and whipped.
- Combine Cheese and Cranberry Sauce: Add a pinch of salt and pepper to the whipped goat cheese and pulse briefly. Scrape in about 1/4 cup of the cooled cranberry sauce and pulse a few more times to combine. Blend to your preferred texture—smooth or slightly chunky. Add more cranberry sauce if desired.
- Serve and Garnish: Transfer the cranberry goat cheese spread to a serving bowl or jar. Garnish with pomegranate arils and fresh rosemary. Serve with bread, crackers, and/or chips for spreading. Optional: Cover and refrigerate overnight to let flavors meld for an even tastier spread.
Notes
- You can sweeten the cranberry sauce with sugar, honey, or maple syrup, depending on your preference.
- The spread can be made a day ahead and refrigerated to enhance the flavor.
- If you prefer, serve extra cranberry sauce on the side for guests who want more.
- The goat cheese should be softened to room temperature for easier whipping.
- Try this spread with a variety of crackers or toasted baguette slices for different textures.
