Description

This Turkey Enchilada Skillet is a quick and flavorful one-pan meal that combines ground turkey, black beans, vegetables, and cheese in a delicious enchilada sauce.


Ingredients

For the Skillet:

  • 1 lb ground turkey
  • 4 corn tortillas, cut into 1-inch slices
  • 1 15 oz can black beans, rinsed
  • 1 15 oz can red enchilada sauce
  • 1 4 oz can diced green chilis
  • 1 red bell pepper, chopped
  • 3/4 cup frozen corn (NOT sweet corn)
  • 1/2 cup chopped white onion
  • 1/2 cup shredded Mexican blend cheese
  • 1 tbsp avocado oil
  • 1 tsp cumin
  • Salt and pepper to taste

Optional Garnishes:

  • Cilantro
  • Olives
  • Queso fresco
  • Avocado
  • Sour cream

Instructions

  1. Cook the Ground Turkey: Heat avocado oil in a skillet, add ground turkey, cumin, salt, and pepper. Cook until no longer pink, breaking into crumbles. Set aside.
  2. Sauté Vegetables: In the same skillet, sauté bell pepper and onion until slightly tender, about 3 minutes.
  3. Combine Ingredients: Add beans, green chilis, enchilada sauce, corn, and cooked turkey back to the skillet. Cover and bring to a boil.
  4. Simmer and Melt Cheese: Reduce heat, mix in tortilla slices. Sprinkle shredded cheese, and heat on low until cheese melts.
  5. Serve: Divide into 4 bowls and top with optional garnishes of choice.
