This Turkey Enchilada Skillet is a quick and flavorful one-pan meal that combines ground turkey, black beans, vegetables, and cheese in a delicious enchilada sauce.

For the Skillet:
- 1 lb ground turkey
- 4 corn tortillas, cut into 1-inch slices
- 1 15 oz can black beans, rinsed
- 1 15 oz can red enchilada sauce
- 1 4 oz can diced green chilis
- 1 red bell pepper, chopped
- 3/4 cup frozen corn (NOT sweet corn)
- 1/2 cup chopped white onion
- 1/2 cup shredded Mexican blend cheese
- 1 tbsp avocado oil
- 1 tsp cumin
- Salt and pepper to taste
Optional Garnishes:
- Cilantro
- Olives
- Queso fresco
- Avocado
- Sour cream
Instructions
- Cook the Ground Turkey: Heat avocado oil in a skillet, add ground turkey, cumin, salt, and pepper. Cook until no longer pink, breaking into crumbles. Set aside.
- Sauté Vegetables: In the same skillet, sauté bell pepper and onion until slightly tender, about 3 minutes.
- Combine Ingredients: Add beans, green chilis, enchilada sauce, corn, and cooked turkey back to the skillet. Cover and bring to a boil.
- Simmer and Melt Cheese: Reduce heat, mix in tortilla slices. Sprinkle shredded cheese, and heat on low until cheese melts.
- Serve: Divide into 4 bowls and top with optional garnishes of choice.
