  • 1 medium yellow onion, diced
  • 1 pound 90% lean ground beef

Spices:

  • 2 1/2 tablespoons chili powder
  • 2 tablespoons ground cumin
  • 2 tablespoons granulated sugar
  • 1 tablespoon garlic powder
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon ground black pepper
  • 1/4 teaspoon ground cayenne pepper (optional)

Liquid and Canned:

  • 1 1/2 cups beef broth
  • 1 (15 oz.) can petite diced tomatoes
  • 1 (16 oz.) can red kidney beans, drained and rinsed
  • 1 (8 oz.) can tomato sauce

Instructions

  1. Saute Onion: Heat olive oil in a large soup pot, cook diced onion for 5 minutes.
  2. Brown Beef: Add ground beef, cook until browned, about 6-7 minutes.
  3. Add Spices: Stir in chili powder, cumin, sugar, tomato paste, garlic powder, salt, pepper, and cayenne (if using).
  4. Combine Ingredients: Add broth, diced tomatoes, kidney beans, and tomato sauce. Stir well.
  5. Simmer: Bring to a low boil, then simmer uncovered for 20-25 minutes, stirring occasionally.
  6. Rest and Serve: Remove from heat, let rest for 5-10 minutes before serving.
