Description

This Pineapple Casserole is a delightful sweet and savory dish perfect as a side or dessert. Combining tangy pineapple with sharp cheddar cheese and a crunchy buttered cracker topping, it offers a comforting, golden-baked treat that pairs wonderfully with ham dinners or can be enjoyed on its own.

Ingredients

Scale

Main Ingredients

  • ⅓ cup all purpose flour
  • ½ cup sugar
  • One 20oz can pineapple tidbits, drained and squeezed of all juice
  • One 20oz can crushed pineapple, drained and squeezed of all juice
  • 1 ½ cups sharp cheddar cheese, grated

Topping

  • ¼ cup butter, melted
  • 40 Ritz crackers crushed, or other butter type cracker

Instructions

  1. Preheat and prepare baking dish. Preheat your oven to 350°F (175°C) and grease a 9-inch square or approximately 1½ quart baking dish to prevent sticking.
  2. Combine dry ingredients and pineapple. In a medium bowl, mix together the flour and sugar. Then add the drained pineapple tidbits and crushed pineapple along with the grated sharp cheddar cheese. Stir everything well to combine evenly.
  3. Pour pineapple mixture into baking dish. Transfer the combined mixture into your prepared greased baking dish, spreading it out evenly.
  4. Prepare cracker topping. In a separate medium bowl, crush the Ritz crackers finely and pour the melted butter over them. Stir thoroughly so all cracker crumbs are coated with butter.
  5. Add the cracker topping. Sprinkle the buttered cracker crumbs evenly over the pineapple mixture in the baking dish, forming a crunchy topping.
  6. Bake the casserole. Place the baking dish in the preheated oven and bake for 35 to 40 minutes, or until the cracker topping is golden brown and the casserole is heated through.
  7. Cool slightly before serving. Remove the casserole from the oven and let it sit for about 5 minutes to set slightly before serving. Enjoy as a side dish or a dessert as you prefer.

Notes

  • This casserole pairs excellently as a side dish alongside ham dinners.
  • Make sure to squeeze out all the juice from the canned pineapples to prevent the casserole from becoming too watery.
  • Using butter crackers for the topping enhances the richness and crunchiness of the dish.
  • The recipe yields about 8 servings, making it great for family meals or gatherings.
