Corn Salad:
- 4 ears of corn
- 2 peaches, sliced or diced
- 1/4 cup red onion, finely chopped
- 3 Tbsp cilantro, chopped
- 1 medium jalapeño, deseeded & thinly sliced or diced
- 1-2 large avocados, diced
Lime-Honey Vinaigrette:
- 3 Tbsp lime juice
- 3 tsp honey
- Salt & black pepper, to taste
Instructions
- Prepare the corn: Cook the corn using your preferred method, cool, and cut off the kernels into a large bowl.
- Make the vinaigrette: Whisk lime juice and honey until combined, then add black pepper to taste.
- Toss and chill: Combine peaches, red onion, cilantro, jalapeño with corn, toss in vinaigrette, season with salt, and chill for 10-20 minutes.
- Serve: Top each bowl with avocado before serving.
