- 12 graham crackers

- 1 egg

- 1 1/2 teaspoons vanilla extract
For the strawberry topping:
- 1 cup strawberries, chopped
- 1 tablespoon sugar
- 1 tablespoon lemon juice
Instructions
- Preheat oven and prepare the baking dish: Preheat the oven to 350°F. Line an 8×8 baking dish with parchment paper.
- Prepare the crust: Crush graham crackers and sugar in a food processor. Add melted butter and pulse until combined. Press the mixture into the baking pan.
- Make the strawberry topping: Cook strawberries, sugar, and lemon juice in a saucepan until thickened. Set aside to cool slightly.
- Prepare the cheesecake layer: Mix cream cheese, yogurt, egg, sugar, and vanilla until smooth.
