Description

This Chicken Black Bean Enchilada Skillet is a quick and easy one-pan meal that is packed with flavor. Tender chicken, black beans, and corn tortillas are smothered in enchilada sauce and cheese for a delicious dinner that the whole family will love.

Chicken:

  • 1 1/2 lbs boneless skinless chicken thighs, cut into bite-size pieces
  • 1 tsp garlic powder
  • 1/2 tsp cumin
  • 1/2 tsp oregano
  • Salt and pepper, to taste

Other Ingredients:

  • 15 oz canned black beans, rinsed and drained
  • 1 1/2 cups red enchilada sauce
  • 1/2 cup salsa
  • 6 small white corn tortillas, cut into 1” strips
  • 1 cup Mexican blend cheese, shredded

Instructions

  1. Season and Cook Chicken: Season chicken thighs with garlic powder, cumin, oregano, salt, and pepper. Sauté in a large skillet until browned and cooked through.
  2. Combine Ingredients: Add black beans, enchilada sauce, and salsa to the skillet. Simmer until beans are cooked.
  3. Add Tortillas and Cheese: Stir in tortilla strips until coated in sauce. Top with cheese, cover, and melt for 3 minutes.
  4. Serve: Garnish with desired toppings like sour cream, green onions, avocado, and tomatoes. Enjoy!
