- 1 pound frozen cut green beans
- 1 bag (32 ounces) frozen Tater Tots

- Cook Ground Beef: In a large skillet, cook 2 pounds of ground beef over medium-high heat for 5-6 minutes until no longer pink, breaking into crumbles. Drain excess fat and transfer the cooked beef to a 5-quart slow cooker.
- Sauté Vegetables: Using the same skillet, add 1 large chopped onion and 1 pound sliced fresh mushrooms. Cook over medium-high heat for 8-10 minutes until the vegetables are tender.
- Add Garlic: Stir in 3 minced garlic cloves and cook for 1 additional minute to release their flavor.
- Combine Soup and Seasonings: Mix in 2 cans of condensed cream of mushroom soup (undiluted), 1/2 teaspoon salt, and 1/2 teaspoon pepper into the cooked vegetable mixture. Stir well to combine all the ingredients.
- Transfer to Slow Cooker: Pour the vegetable and soup mixture into the slow cooker over the cooked ground beef. Add 1 pound of frozen cut green beans and stir to combine all ingredients evenly.
- Top with Tater Tots and Cheese: Evenly arrange a 32-ounce bag of frozen Tater Tots over the mixture in the slow cooker. Sprinkle 1 cup shredded cheddar cheese on top.
- Cook: Cover the slow cooker and cook on low for 6 hours, allowing flavors to meld and the Tater Tots to crisp slightly on top.
- Rest: After cooking, let the casserole stand uncovered in the slow cooker for 15 minutes to set before serving.

- For a thicker casserole, you can add a little shredded cheese inside before adding the Tater Tots.
- You can substitute frozen green beans with fresh if preferred, just blanch them before adding.
- To make this dish slightly healthier, use lean ground beef or ground turkey.
