  • 1/2 teaspoon pepper
  • 1 pound frozen cut green beans
  • 1 bag (32 ounces) frozen Tater Tots
  • 1 cup shredded cheddar cheese


Instructions

  1. Cook Ground Beef: In a large skillet, cook 2 pounds of ground beef over medium-high heat for 5-6 minutes until no longer pink, breaking into crumbles. Drain excess fat and transfer the cooked beef to a 5-quart slow cooker.
  2. Sauté Vegetables: Using the same skillet, add 1 large chopped onion and 1 pound sliced fresh mushrooms. Cook over medium-high heat for 8-10 minutes until the vegetables are tender.
  3. Add Garlic: Stir in 3 minced garlic cloves and cook for 1 additional minute to release their flavor.
  4. Combine Soup and Seasonings: Mix in 2 cans of condensed cream of mushroom soup (undiluted), 1/2 teaspoon salt, and 1/2 teaspoon pepper into the cooked vegetable mixture. Stir well to combine all the ingredients.
  5. Transfer to Slow Cooker: Pour the vegetable and soup mixture into the slow cooker over the cooked ground beef. Add 1 pound of frozen cut green beans and stir to combine all ingredients evenly.
  6. Top with Tater Tots and Cheese: Evenly arrange a 32-ounce bag of frozen Tater Tots over the mixture in the slow cooker. Sprinkle 1 cup shredded cheddar cheese on top.
  7. Cook: Cover the slow cooker and cook on low for 6 hours, allowing flavors to meld and the Tater Tots to crisp slightly on top.
  8. Rest: After cooking, let the casserole stand uncovered in the slow cooker for 15 minutes to set before serving.
