Ingredients
Scale
Soup Ingredients
- 16 oz. dried green split peas, sorted and rinsed (about 2 ¼ cups) DO NOT SOAK
- 2 cups cubed ham
- 1 cup chopped yellow onion
- 1 cup diced carrots
- 1/2 cup diced celery
- 1 tablespoon minced garlic
- 2 rosemary sprigs or 1/2 teaspoon dried rosemary
- 2 thyme sprigs or 1/2 teaspoon dried thyme
- 1 bay leaf
- 4 cups chicken broth
- 2 cups water
- Salt and pepper to taste
- Parsley, chopped, for serving
Instructions
- Combine Ingredients: Add the sorted and rinsed green split peas, cubed ham, chopped yellow onion, diced carrots, diced celery, minced garlic, rosemary sprigs or dried rosemary, thyme sprigs or dried thyme, bay leaf, chicken broth, and water into the slow cooker. This sets the base for the soup’s rich flavors.
- Cook Slowly: Place the lid on the slow cooker and cook the mixture on HIGH for 4 hours or on LOW for 8 to 9 hours. Cooking slowly allows the peas to break down, and the flavors to meld perfectly, creating a creamy texture without needing to soak the peas beforehand.
- Season and Serve: Once cooking is complete, season the soup with salt and pepper to taste. Depending on the saltiness of your ham, you might not need additional salt. Stir in chopped parsley before serving for a fresh, vibrant finish.
Notes
- Do not soak the split peas before cooking; rinsing is sufficient.
- The ham adds saltiness, so adjust salt carefully at the end.
- If preferred, dried herbs can replace fresh ones, using half the quantity.
- This soup thickens upon standing; add extra broth or water to adjust consistency when reheating.
- Leftovers store well in the refrigerator for up to 3 days or freeze for up to 3 months.
