Instructions
- Combine Seasonings: Add all the seasoning ingredients to a slow cooker liner and shake well to mix thoroughly, ensuring an even blend of flavors.
- Coat Chicken: Pat the chicken drumsticks dry with a paper towel. Place them in the slow cooker bag containing the seasoning mix. Twist the bag closed and toss the chicken around in the bag until coated with the seasonings, even if not completely covered. Place the bag with chicken into a 6-quart slow cooker.
- Prepare Glaze: In a bowl, mix together raspberry jam and Dijon mustard. Optional: stir in 1 to 3 tablespoons of chopped chipotle peppers in adobo sauce for a smoky spice. Reserve half a cup of this sauce for later glazing.
- Add Glaze to Chicken: Drizzle the remaining raspberry-mustard mixture over the chicken inside the slow cooker to infuse flavor while cooking.
- Cook Chicken: Cover the slow cooker with its lid and cook the chicken on high heat for 4 hours, or on low heat for 6 hours. If possible, flip the drumsticks halfway through cooking for even flavor distribution.
- Prepare for Broiling: Once cooking is complete, carefully remove the chicken from the slow cooker and place the drumsticks on a foil-lined, rimmed baking sheet.
- Preheat Broiler: Set the oven to the broil setting and position the oven rack approximately 6 inches from the broiler element.
- Glaze Chicken: Brush the reserved raspberry glaze evenly over the drumsticks to enhance their stickiness and flavor.
- Broil Drumsticks: Broil the chicken for 3 to 6 minutes, watching closely so the glaze becomes sticky and glossy but does not burn. Remove once the desired caramelization is achieved.
- Serve: Serve the drumsticks immediately out of the oven, with any leftover raspberry glaze on the side for dipping or additional drizzling.
