  • 1 1/2 lbs. chicken breasts (about 3 chicken breasts)
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 8.1 oz. jarred pesto
  • 1/2 cup salted butter
  • 1/2 lemon

For the Pasta:

  • 1 lb. dried rotini pasta
  • 1/2 cup grated parmesan cheese
  • 2 cups shredded mozzarella
  • 1/4 tsp. dried basil (for garnish)

Instructions

  1. Add the Chicken: Place the chicken in the slow cooker, season with salt and pepper. Spread pesto over the chicken, squeeze lemon juice, and top with butter slices.
  2. Cook: Cover and cook on low for 5-6 hours without lifting the lid.
