- 1 ½ lbs. boneless skinless chicken breasts
Soup and Seasonings
- 10.5 oz. cream of chicken soup (1 can)
- 10.5 oz. cream of mushroom soup (1 can)
- 1 can water, measured from one of the cans above
- ½ tsp. garlic powder
- ¼ tsp. pepper
- 1 oz. packet Lipton® onion soup mix
Grain
- 2 cups Minute® rice (not standard rice)
Instructions
- Prepare the rice mixture: In a large bowl, combine the cream of chicken soup, cream of mushroom soup, one can of water, garlic powder, pepper, and Minute rice. Stir thoroughly to mix all ingredients evenly.
- Prepare the slow cooker: Spray the inside of the slow cooker with non-stick cooking spray to prevent sticking and make cleanup easier.
- Layer the ingredients: Pour half of the soup and rice mixture into the slow cooker. Arrange the chicken breasts evenly over this layer, then spread the remaining rice mixture on top of the chicken breasts.
- Add the seasoning: Sprinkle the Lipton® onion soup mix evenly over the top layer to add extra flavor.
- Cook: Cover the slow cooker with the lid and cook on HIGH for 3.5 hours. It is important not to peek during the cooking time, as keeping the lid closed ensures even cooking and retains moisture.
- Serve: Once the cooking is complete, serve the dish hot and enjoy the creamy, tender chicken and flavorful rice.
Notes
- Do not substitute the Minute® brand rice. Regular rice requires more liquid and cooks unevenly in a slow cooker, often turning gummy.
- Resist the urge to open the slow cooker lid during cooking to maintain the heat and moisture for perfectly cooked chicken and rice.
- This recipe is best served fresh but can be stored refrigerated for up to 3 days.
