Description

  • 0.60 oz. package dry zesty Italian salad dressing mix
  • 1 tablespoon all-purpose flour

For Cooking

  • 1 tablespoon cooking oil
  • ½ cup fresh lemon juice (about 2 large lemons, do not use bottled lemon juice)
  • ½ cup chicken broth


Instructions

  1. Prepare the Chicken: Cut the chicken breasts lengthwise into two thin pieces to ensure even cooking and better absorption of flavors.
  2. Coat the Chicken: Combine the dry zesty Italian salad dressing mix and flour in a ziplock bag. Add the chicken pieces, seal the bag, and shake well to evenly coat all pieces with the mixture.
  3. Brown the Chicken: Heat a large skillet over medium-high heat and add the cooking oil. Once hot, brown the chicken pieces on both sides for a few minutes each; do not cook through, just achieve a golden exterior to enhance flavor.
  4. Add to Slow Cooker: Transfer the browned chicken pieces to the slow cooker. Pour the fresh lemon juice and chicken broth over the chicken, ensuring even coverage.
  5. Cook: Place the lid on the slow cooker and cook on HIGH for 3 hours. Avoid opening the lid during cooking to maintain heat and moisture.
