Description

This Slow Cooker Alpine Chicken recipe combines tender boneless skinless chicken breasts with creamy Swiss cheese, savory cream of chicken soup, crunchy almonds, and buttery stuffing. Cooked low and slow in a crockpot, this comforting dish is easy to prepare and perfect for a hearty family meal.

Ingredients

Scale

Chicken and Cheese

  • 1 ½ lbs. boneless skinless chicken breasts
  • 6-8 slices Swiss cheese

Soup Mixture

  • 10.5 oz. can cream of chicken soup
  • ½ cup milk

Toppings and Stuffing

  • ½ cup sliced or slivered almonds, divided
  • 6 oz. box chicken Stove-top stuffing mix
  • ⅓ cup salted butter, melted

Instructions

  1. Prepare Soup Mixture: In a small bowl, whisk together the cream of chicken soup and milk until smooth. Set this mixture aside for later use.
  2. Layer Ingredients in Slow Cooker: Place the boneless skinless chicken breasts evenly on the bottom of the slow cooker. Layer the Swiss cheese slices over the chicken breasts. Pour the prepared soup mixture evenly over the cheese and chicken. Sprinkle half of the sliced almonds over the soup mixture. Next, add the chicken Stove-top stuffing mix on top. Drizzle the melted salted butter evenly over the stuffing layer. Finally, sprinkle the remaining almonds over everything.
  3. Cook: Cover the slow cooker with the lid and set it to cook on LOW heat for 5 to 6 hours. Avoid opening the lid during cooking to maintain temperature and moisture for perfectly tender chicken.
  4. Serve: Once cooking is complete, carefully scoop portions onto plates and serve hot. Enjoy the rich flavors and comforting textures of this Alpine chicken dish.

Notes

  • To prevent the chicken from drying out, do not open the slow cooker during cooking time.
  • You can substitute Swiss cheese with Gruyère for a slightly nuttier flavor.
  • For a lower fat option, use low-fat milk and reduced-fat cream of chicken soup.
  • If you don’t have Stove-top stuffing, feel free to use a homemade stuffing mix or breadcrumbs with herbs.
  • Ensure all ingredients are evenly distributed for consistent flavors throughout the dish.
