  • 4 Cloves Garlic, finely chopped

For the Roasted Potatoes and Vegetables:

  • 2 pounds Small Red Potatoes
  • 2 cups Broccoli
  • 1 Medium Onion, sliced
  • 1 Red Pepper, cut into cubes
  • 1/4 cup Olive Oil
  • 12 Tablespoons Ground Cumin
  • 1 Tablespoon Dried Oregano
  • Salt and Pepper, to taste

Instructions

  1. Preheat the oven: Preheat your oven to ‘high’ in broil mode.
  2. Prepare the sheet pan: Add cooking spray or olive oil to the sheet pan.
  3. Boil the potatoes: Boil the red potatoes with salt for 20 minutes.
  4. Prepare the seasoning: In a large bowl, mix 2 cloves of garlic, olive oil, cumin, oregano, salt, and pepper. Add the broccoli, onions, red pepper, and boiled potatoes to the bowl and mix well.
  5. Season the flank steak: Season the flank steak with salt, pepper, and remaining garlic. Slice the steak thinly and add to the sheet pan.
