Instructions

- Make the Sauce: In a bowl, whisk together low sodium soy sauce, water, brown sugar, sambal oelek, rice vinegar, sesame oil, and cornstarch until well combined and smooth.
- Cook the Rice: Prepare the rice according to the package instructions, either white or brown rice, or cook cauliflower rice as a low-carb option.
- Stir Fry the Beef: Heat a large heavy skillet over medium heat and add a splash of vegetable oil. Working in batches to avoid overcrowding, place the beef strips in a single layer. Let them cook undisturbed for 1-2 minutes to develop a nice brown crust, then flip and cook the other side until browned and cooked through. Remove the beef from the pan and set aside.
- Cook Broccoli: In the same skillet, add another splash of oil. Add the broccoli florets and stir fry for 2-3 minutes until they turn bright green. Optionally, add a splash of water to steam the broccoli slightly for tenderness. Remove broccoli from the pan and set aside.
- Sauté Aromatics and Combine: Reduce the heat to low and let the pan cool slightly. Add a final splash of oil, then the grated ginger and minced garlic. Sauté for 1-2 minutes until fragrant. Pour in the prepared sauce and stir constantly until it thickens into a sticky glaze. Return the beef and broccoli to the pan and toss gently to coat everything evenly in the sauce.
