For the Filling
- 1 lb pork sausage
- 1/2 cup bread crumbs

- 2 Tbs chopped parsley

- 1 tsp garlic powder
- 1 tsp onion powder

- 2 sheets (17.3 oz each) puff pastry (thawed)
- 1 large egg
- 1 Tbs water
Instructions
- Defrost Puff Pastry: Thaw the puff pastry sheets according to the package directions to make them flexible enough to work with.
- Preheat Oven: Set your oven to 425°F (220°C) and line a large baking sheet with parchment paper for easy cleanup.
- Prepare Filling: In a large mixing bowl, combine the pork sausage, bread crumbs, 1 egg, parsley, thyme, garlic powder, onion powder, salt, and pepper. Mix thoroughly until all ingredients are well incorporated. Divide the mixture into 6 equal portions and set aside.
- Roll Out Pastry: Flour a clean surface and unfold each puff pastry sheet. Gently roll out each sheet to make them slightly thinner. Cut each sheet lengthwise into 3 long rectangular strips.
- Assemble Sausage Rolls: Place one sausage portion along the center of each pastry strip, leaving about an inch of pastry on either side. Bring the sides together and pinch to seal, then gently flatten to secure the filling.
- Shape and Vent: Cut each sausage-filled pastry into 6 pieces approximately 2 inches long. Pierce the top of each piece twice with a knife to create venting holes, allowing steam to escape during baking.
- Bake: Arrange the sausage rolls on the prepared baking sheet, spaced about 2 inches apart. Whisk together the egg and water and brush this mixture over the tops of the sausage rolls. Bake for 20 minutes, or until the pastry is puffed and golden brown.
