Pasta:
- 16 ounces penne pasta
- Salt for water
Sausage Pepper Mixture:
- 1 pound ground Italian sausage
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 onion, diced
- 2 15–ounce cans diced tomatoes
- 3 teaspoons Italian seasoning
For Serving:
- Parmesan cheese for topping
Instructions
- Cook the Pasta: Bring a large pot of salted water to a boil. Cook the penne pasta according to package instructions. Reserve 1 cup of pasta water before draining.
- Cook the Sausage: In a large skillet over medium-high heat, cook the Italian sausage until mostly browned, about 6 minutes. Drain excess fat.
- Add Vegetables: Add diced onions to the skillet and cook until slightly tender. Then, add sliced bell peppers, diced tomatoes, and Italian seasoning. Cook until peppers are softened, about 8-10 minutes.
- Combine: Return drained pasta to the pot. Transfer the sausage and pepper mixture to the pot. Mix well, adding reserved pasta water as needed for desired consistency.
- Serve: Serve the pasta topped with grated Parmesan cheese.
