Fresh Peaches:
- 2 pounds (900 grams) fresh peaches, cut into 1-inch chunks
Lemon Juice Mixture:

- 1 cup (200 grams) granulated sugar, divided
Instructions
- Preheat the Oven: Preheat the oven to 400 degrees F and line a half baking sheet with parchment paper.
- Prepare the Peaches: In a large bowl, combine the chopped peaches, lemon juice, and 1/2 cup of sugar. Spread the mixture on the baking sheet.
- Roast the Peaches: Roast the peaches for 15 minutes. Taste and adjust sweetness by adding more sugar if desired. Roast for additional 10-15 minute intervals until desired sweetness is achieved.
- Cool and Store: Once roasted, scrape the peaches and syrup into a bowl to cool. Store in the refrigerator for up to 2 weeks or freeze for up to 6 months.
