Description

This Pumpkin Pecan Cobbler recipe combines warm autumn spices with a luscious pumpkin batter topped with a sweet pecan crumble. The unique technique of pouring hot water over the topping before baking creates a delightful cobbler with a syrupy sauce and a crunchy nutty topping. Perfect for cozy gatherings or holiday desserts, this easy-to-make cobbler offers rich flavors and comforting textures served best with vanilla ice cream.

Ingredients

Units Scale

For the Cobbler

  • 1 cup + 3 tablespoons all purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3/4 cup granulated sugar
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon cloves
  • 1/2 cup pumpkin puree
  • 1/4 cup milk
  • 1/4 cup melted butter or vegetable oil
  • 1 1/2 teaspoons vanilla extract

For the Topping

  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/4 cup chopped pecans
  • 1 1/2 cups very hot water

Instructions

  1. Preheat the Oven: Preheat your oven to 350 degrees Fahrenheit to prepare for baking the cobbler.
  2. Mix Dry Ingredients: In a medium bowl, combine the all purpose flour, baking powder, salt, granulated sugar, cinnamon, nutmeg, and cloves. Stir these dry ingredients well and set the mixture aside.
  3. Mix Wet Ingredients: In a smaller bowl, whisk together the pumpkin puree, milk, melted butter (or vegetable oil), and vanilla extract until thoroughly combined.
  4. Combine Wet and Dry: Pour the wet ingredient mixture into the dry ingredients bowl and stir until a thick batter forms. Transfer this batter evenly into an 8-inch casserole dish with high sides.
  5. Prepare Topping: In a separate bowl, mix the granulated sugar, brown sugar, and chopped pecans until combined.
  6. Add Topping and Water: Evenly sprinkle the sugar-pecan topping over the batter in the casserole dish. Then carefully pour 1 1/2 cups of very hot water over the topping without stirring to maintain the layered structure.
  7. Bake the Cobbler: Place the casserole dish on a baking sheet to catch any overflow, then bake in the preheated oven for 40 minutes, or until the center is set and the topping looks bubbly and golden.
  8. Cool and Serve: Remove from the oven and allow to cool for 5 to 10 minutes before serving. For best results, garnish with extra pecans and a scoop of vanilla ice cream.

Notes

  • Use a baking sheet underneath the casserole dish to catch any bubbling over during baking.
  • Do not stir after adding the hot water to create the characteristic cobbler syrup effect.
  • If desired, substitute melted butter with vegetable oil for a dairy-free version.
  • Serve warm topped with additional pecans and vanilla ice cream for added richness.
  • Store leftovers covered in the refrigerator for up to 3 days.
