Ingredients
Scale
Ingredients:
- 35 pecan halves
- 35 pretzel twists
- 35 caramels
- 12 ounces semi-sweet chocolate chips
- 1 teaspoon fleur de sel
Instructions
- Preheat Oven: Preheat your oven to 325°F to prepare for roasting the pecans and softening the caramels.
- Roast Pecans: Spread the pecan halves on a baking sheet and roast them in the oven for about 5 minutes or until they become aromatic, enhancing their flavor.
- Assemble Pretzels and Caramels: Line a baking sheet with Silpat or parchment paper. Place the pretzel twists on the sheet in rows (7 rows of 5 pretzels each). Set one caramel on top of each pretzel.
- Melt Caramel: Place the baking sheet back in the oven and bake for 5 to 6 minutes. Watch carefully to soften the caramels without melting them completely. Once softened, press a roasted pecan half gently on top of each caramel.
- Melt Chocolate: Melt the semi-sweet chocolate chips in the microwave using 30-second intervals, stirring between each until the chocolate is smooth and fully melted.
- Add Chocolate Topping: Remove the pretzels from the baking sheet. Spoon small dollops (about half a tablespoon) of melted chocolate onto the Silpat or parchment paper. Gently press each pretzel onto a chocolate dollop to secure it. Continue until all pretzels are covered. Drizzle any leftover chocolate over the top and sprinkle each with fleur de sel.
- Cool & Serve: Let the pretzel turtles cool completely to set the chocolate and caramel. To speed up the process, refrigerate for about 30 minutes before serving.
Notes
- Ensure caramels soften but do not fully melt to maintain the turtle shape.
- A Silpat or parchment paper prevents sticking and eases removal.
- Roasting pecans enhances their nutty flavor and adds crunch.
- Fleur de sel adds a gourmet salty finish complementing the sweetness.
- Store leftovers in an airtight container at room temperature or refrigerated for longer freshness.
