Potatoes:

  • 3 large russet potatoes, baked and cooled overnight in the fridge

Seasoning Mix:

  • 3 tablespoons salted butter
  • 1/4 cup diced shallot
  • 1 clove garlic, minced
  • 2 teaspoons salt
  • 1/2 teaspoon ground black pepper

Cheese Mixture:

  • 1 1/2 cups sour cream
  • 2 1/2 cups freshly shredded sharp white cheddar cheese, divided
  • 1/2 cup grated Parmesan

Instructions

  1. Preheat Oven: Preheat oven to 375°F and grease a 2-quart baking dish.
  2. Saute Shallot and Garlic: In a small pan, melt the butter and saute the shallot until softened. Add garlic and cook briefly. Remove from heat.
  3. Prepare Potatoes: Grate the cooled baked potatoes with the skin on.
  4. Mix Ingredients: In a large bowl, combine sour cream, salt, pepper, 2 cups of cheddar, shallot, and garlic. Gently fold in the shredded potatoes.
  5. Assemble Casserole: Transfer the potato mixture to the baking dish. Top with remaining cheddar and Parmesan.
  6. Bake: Bake for 25-30 minutes until golden brown.
