For the Lamb Chops
- 8 lamb chops, each approx. 1-inch thick
- Salt and pepper, to season
- ¼ cup olive oil
- 3 cloves garlic, minced
- 2 tablespoon fresh parsley, minced
- 1 tablespoon fresh rosemary, minced
- 1 tablespoon olive oil, for cooking
- 2 tablespoon butter, for cooking
Instructions
- Season. Generously season both sides of your lamb chops with salt and pepper to enhance the natural flavors of the meat.
- Prepare the garlic herb marinade. In a small bowl, mix together the olive oil with the freshly minced garlic and fresh herbs. Using a pastry brush, evenly coat both sides of the lamb chops with the marinade. Discard any remaining marinade to prevent cross-contamination. Allow the lamb chops to marinate at room temperature for 30 minutes for optimum flavor infusion.
- Cook. Heat a large cast-iron skillet or frying pan over medium-high heat. Add the olive oil and swirl to coat the skillet’s surface evenly. Once the oil begins to smoke slightly, add the lamb chops to the pan. Cook the chops until lightly browned, about 3-4 minutes. Add butter to the skillet, flip each chop, and continue cooking until the internal temperature reaches 125°F for medium-rare or 135°F for medium, approximately an additional 4-5 minutes. Use a digital meat thermometer for accuracy.
- Rest. Remove the lamb chops from the skillet and let them rest for at least 5 minutes. Resting allows the juices to redistribute, ensuring a juicy and tender chop.
- Serve. Serve your lamb chops warm with homemade mint chutney or your favorite dipping sauce. Enjoy the rich, herby flavors complemented by a buttery sear.
Notes
- If marinating longer than 30 minutes, cover the lamb chops and refrigerate. Bring them back to room temperature before cooking for even cooking.
