Fritters
- 1 cup (125 g) all-purpose flour
- 1 tablespoon granulated sugar
- 1 teaspoon baking powder
- 1/2 teaspoon cinnamon
- 1/4 teaspoon ginger
- 1/4 teaspoon kosher salt
- 1 pinch ground nutmeg
- 1/4 cup (60 g) heavy whipping cream
- 3 ounces vanilla yogurt
- 1 large egg
- 1 can (15.25 ounces) peaches, diced and juice reserved for glaze
- Vegetable or canola oil, for frying
Glaze
- 1 1/4 cups (150 g) confectioners’ sugar
- 1/4 teaspoon vanilla
- 3–6 teaspoons reserved peach juice, (optional)
Instructions
- Peach Fritters – In a medium bowl, whisk together the dry ingredients. In a separate bowl, mix the wet ingredients. Combine wet and dry ingredients, fold in peaches, fry in oil until golden brown.
- Glaze – Mix confectioners’ sugar, vanilla, and peach juice to make a pourable glaze. Drizzle over cooled fritters.
Notes
- Make sure the oil is at the right temperature for frying.
- Adjust sweetness of glaze to your preference by adding more or less peach juice.
