  • 1 1/2 cups fresh ripe peaches, cubed
  • 2 tablespoons granulated sugar
  • 1 teaspoon lemon juice
  • 2 teaspoons cornstarch
  • 1 tablespoon water
  • 1/2 cup very thinly sliced peaches for the filling

For the Tangzhong

  • 3/4 cup water
  • 1/4 cup bread flour

For the Dough

  • 3 2/3 cups bread flour
  • 1/3 cup granulated sugar
  • 2 teaspoons instant yeast
  • 1 teaspoon fine sea salt
  • 1/3 cup whole milk, room temperature
  • 1/3 cup heavy cream
  • 1 large egg, room temperature
  • Tangzhong from recipe above
  • 1 teaspoon vanilla paste or extract
  • 6 tablespoons unsalted butter, softened

For the Brown Sugar Filling

  • 1/2 cup unsalted butter, room temperature
  • 2/3 cup brown sugar
  • 1 teaspoon ground cinnamon

For the Crumb Topping

  • 1/2 cup all-purpose flour
  • 1 tablespoon granulated sugar
  • 1 teaspoon ground cinnamon
  • 3 tablespoons unsalted butter, melted

For the Cream Cheese Vanilla Glaze

  • 4 tablespoons unsalted butter, room temperature
  • 2 ounces cream cheese, room temperature
  • 1 cup powdered sugar
  • 2 1/2 tablespoons heavy cream

Instructions

  1. Make the Peach Jam – In a pot, combine the peaches, granulated sugar, and lemon juice. Cook until juicy, then add cornstarch mixture. Cool.
  2. Make the Tangzhong – Whisk water and flour in a pot until paste-like. Set aside.
  3. Make the Dough – Mix dry ingredients, then add wet ingredients and tangzhong. Knead and add butter. Rest for 30 minutes.
  4. Assembly – Line baking dish. Spread brown sugar filling on dough, top with peach filling and sliced peaches. Roll into strips and place in pan. Let rise.
  5. Make the Crumb Topping – Combine ingredients and sprinkle over rolls. Bake.
  6. Make the Cream Cheese Icing – Mix cream cheese, butter, sugar, and cream until smooth. Glaze rolls.
