Instructions
- Preheat the oven: Preheat the oven to 425°F (218°C).
- Prepare zucchini: Slice the zucchinis into 3-inch (7 cm) lengths and 1/2-inch (1 cm) thick strips.
- Prepare egg mixture: In a bowl, combine salt, black pepper, and eggs. Beat well.
- Coat zucchini: Dip zucchini strips in egg mixture, then coat with the panko-parmesan mixture.
- Bake: Arrange coated zucchini on a baking sheet lined with parchment paper. Bake for 20-25 minutes until golden and crispy.
- Serve: Serve hot with ranch dressing.
