Ganache:
- three 4-ounce bars (339g) semi-sweet or milk chocolate, finely chopped
- 1 and 1/2 cups (360ml) heavy cream
Marshmallow Meringue:
- 6 egg whites, at room temperature
- 1 and 1/2 cups (300g) granulated sugar
- 3/4 teaspoon cream of tartar
- 1 teaspoon pure vanilla extract
Additional:
- 30–36 full-sheet graham crackers (a little over 1 standard box)
Instructions
- Make the Ganache: Heat cream, pour over chocolate, stir until melted, refrigerate.
- Make the Marshmallow Meringue: Whisk egg whites, sugar, cream of tartar over simmering water, beat until stiff peaks form.
- Assemble the Cake: Layer graham crackers, marshmallow meringue, and chocolate ganache; repeat for 6 layers.
- Refrigerate: Cover and refrigerate for at least 12 hours.
- Finish and Serve: Top with reserved marshmallow meringue, torch if desired, serve.
