Oreo Crust

Ganache
- 1/4 cup dark chocolate chips
- 2 tablespoons heavy whipping cream
Mint Cookies and Cream Filling
- 1 1/2 cups heavy whipping cream
- 1 tablespoon EZ Gel
- 8 ounces cream cheese
- 1 1/2 cups powdered sugar
- 1/2 teaspoon mint extract or emulsion
- 1 drop green food coloring
- 8 Mint Oreo cookies, crushed
Whipped Topping
- 1 cup heavy whipping cream
- 1/3 cup powdered sugar
- 1/2 teaspoon vanilla
Instructions
- Mint Oreo Crust: Using a food processor or blender, pulse the cookies until you’ve created a fine crumb. Combine the Mint Oreo crumbs and melted butter in a mixing bowl. Firmly press the Oreo mixture into a pie pan.
- Ganache: Combine chocolate chips and cream, microwave until smooth. Spread on pie crust.
- Mint Cookies and Cream Filling: Beat whipped cream with EZ Gel. Mix cream cheese, sugar, and mint extract. Fold in whipped cream, then add food coloring and broken cookies. Spread on crust.
- Whipped Topping: Beat cream, sugar, and vanilla until soft peaks form. Spread on pie or pipe around edges. Refrigerate before serving.
