Description

This creamy and flavorful Mayo Chicken with Parmesan recipe features tender, thin chicken breasts coated in a luscious mixture of mayonnaise, garlic, and Parmesan cheese, then baked to juicy perfection with a golden, cheesy crust. It’s an easy and quick dinner option that delivers comforting flavors and can be easily customized with seasonings.

Ingredients

Scale

Chicken

  • 4 thin boneless skinless chicken breasts (about 1 ½ pounds)
  • Salt and pepper for seasoning

Mayo-Parmesan Mixture

  • ½ cup mayonnaise (115 grams)
  • 1 cup grated Parmesan cheese, divided (3 ounces)
  • 2 teaspoons minced garlic (16 grams)
  • ½ teaspoon ground mustard
  • ½ teaspoon salt
  • ¼ teaspoon paprika
  • ¼ teaspoon black pepper

Instructions

  1. Preheat Oven: Preheat your oven to 400ºF and spray a 9×13-inch baking dish with cooking spray to prevent sticking.
  2. Prepare Chicken: Pound the chicken breasts to an even thickness to ensure uniform cooking. If needed, slice larger chicken breasts horizontally to create thinner cutlets.
  3. Season Chicken: Place the chicken evenly in the prepared baking dish and season both sides lightly with salt and pepper.
  4. Mix Mayo-Parmesan Topping: In a small bowl, combine the mayonnaise, ¾ cup of the grated Parmesan cheese, minced garlic, ground mustard, salt, paprika, and black pepper. Stir well until fully incorporated.
  5. Apply Topping: Evenly spoon the mayonnaise mixture over the chicken breasts, covering each piece completely. Then, sprinkle the remaining ¼ cup of Parmesan cheese evenly over the top.
  6. Bake Chicken: Bake the chicken in the preheated oven for 20 minutes, or until the internal temperature reaches 165ºF and the chicken is cooked through.
  7. Broil for Browning: To achieve a nicely browned and slightly crisp top, switch the oven to the broiler setting on low and broil the chicken for about 2 minutes. Watch carefully to avoid burning.

Notes

  • Reheat leftovers in an air fryer to restore crispiness and texture.
  • For added flavor, mix ½ to 1 teaspoon of Italian seasoning into the mayo mixture.
  • You can substitute half of the mayonnaise with sour cream or Greek yogurt for a tangier topping.
  • Store leftovers in an airtight container in the refrigerator for up to 4 days.
  • Use a meat thermometer to ensure chicken is cooked safely to 165ºF internal temperature.
