Bisque:
- 1/2 pound bacon, chopped
- 1 medium yellow onion, finely chopped
- 1/2 bell pepper, any color, finely chopped
- 2 stalks celery, finely chopped
- 4 cloves garlic, minced
- 1/4 cup sherry cooking wine
- 8 tablespoons butter (1 stick or 1/2 cup)
- 1/2 cup all-purpose flour
- 4 cups shrimp stock or alternative
- 1 1/2 cups water
- 2–4 green onions, chopped
- 1 bunch fresh parsley, chopped
- 1 1/2 pounds medium raw shrimp, peeled and deveined
- 1 tablespoon Cajun seasoning, or to taste
- 4 ears of corn, kernels removed (2–3 cups)
- 2 cups heavy cream, warmed
- Salt, black pepper, or Cajun seasoning to taste
Instructions
- PREP: Finely chop onion, bell pepper, celery, green onions, and parsley. Mince garlic. Season shrimp with Cajun seasoning.
- CRISP: Cook bacon in a dutch oven until starting to crisp. Drain excess grease.
- SAUTÉ: Add onion, bell pepper, celery to the pot. Sauté until soft, then add garlic.
- DEGLAZE: Pour in sherry to deglaze, simmer briefly.
- ROUX: Melt butter, sprinkle flour, cook until slightly darkened.
- SIMMER: Whisk in stock gradually, then water. Add parsley and green onions. Simmer for 20 minutes.
- COOK: Add shrimp, corn, and cream. Simmer until shrimp is cooked through.
- FINISH: Adjust seasoning to taste.
- SERVE: Garnish and serve hot.
