  • 1/2 pound bacon, chopped

  • 1/2 bell pepper, any color, finely chopped
  • 2 stalks celery, finely chopped
  • 4 cloves garlic, minced
  • 1/4 cup sherry cooking wine
  • 8 tablespoons butter (1 stick or 1/2 cup)
  • 1/2 cup all-purpose flour
  • 4 cups shrimp stock or alternative
  • 1 1/2 cups water
  • 24 green onions, chopped
  • 1 bunch fresh parsley, chopped
  • 1 1/2 pounds medium raw shrimp, peeled and deveined
  • 1 tablespoon Cajun seasoning, or to taste
  • 4 ears of corn, kernels removed (23 cups)
  • 2 cups heavy cream, warmed
  • Salt, black pepper, or Cajun seasoning to taste

Instructions

  1. PREP: Finely chop onion, bell pepper, celery, green onions, and parsley. Mince garlic. Season shrimp with Cajun seasoning.
  2. CRISP: Cook bacon in a dutch oven until starting to crisp. Drain excess grease.
  3. SAUTÉ: Add onion, bell pepper, celery to the pot. Sauté until soft, then add garlic.
  4. DEGLAZE: Pour in sherry to deglaze, simmer briefly.
  5. ROUX: Melt butter, sprinkle flour, cook until slightly darkened.
  6. SIMMER: Whisk in stock gradually, then water. Add parsley and green onions. Simmer for 20 minutes.
  7. COOK: Add shrimp, corn, and cream. Simmer until shrimp is cooked through.
  8. FINISH: Adjust seasoning to taste.
  9. SERVE: Garnish and serve hot.
