Ingredients

Celery, Carrot, and Onion Mixture:

  • 2 sticks celery, chopped finely
  • 2 medium carrots, peeled & chopped finely
  • 1/2 medium onion, chopped
  • 1 tablespoon butter
  • 1 tablespoon olive oil

Soup Base:

  • 3 cloves garlic, minced
  • 2 tablespoons flour
  • 6 cups chicken broth
  • 1/4 teaspoon Italian seasoning

Additional Ingredients:

  • 1.5 pounds uncooked chicken breasts
  • 1 cup uncooked orzo
  • 1 tablespoon lemon juice, or to taste
  • 1 tablespoon chopped fresh parsley, or to taste
  • Salt & pepper, to taste

Instructions

  1. Sauté the Celery, Carrots, and Onions: In a large soup pot, sauté the celery, carrots, and onions with butter and oil over medium-high heat for 5-7 minutes.
  2. Add Aromatics and Flour: Stir in the garlic and cook briefly, then add the flour and cook for an additional minute.
  3. Prepare the Broth: Pour in the chicken broth, dissolve the flour, add Italian seasoning, and chicken. Bring to a boil.
  4. Simmer: Cover the pot slightly open and simmer for 15 minutes.
  5. Cook the Orzo: Stir in the orzo and cook for another 10 minutes or until tender, stirring occasionally.
  6. Finish and Serve: Remove chicken, chop it, return it to the pot. Add lemon juice, parsley, salt, and pepper. Serve hot.

Notes

  • You can adjust the lemon juice to suit your taste preferences.
  • This soup reheats well but may need additional broth when reheating as the orzo tends to absorb liquid.
