Sauce:

  • 4 spicy Italian sausage links, casings removed

  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon cracked black pepper
  • 1 red bell pepper, cored and thinly sliced
  • 1 yellow bell pepper, cored and thinly sliced
  • 1 orange bell pepper, cored and thinly sliced
  • 4 cloves garlic, pressed through garlic press
  • 1/2 cup white white (Chardonnay)
  • 1 (28 ounce) can diced tomatoes, with juice
  • 2 tablespoons flat-leaf parsley, chopped
  • 1/4 cup fresh basil leaves, julienned, divided use

Instructions

  1. Prepare the Pappardelle Noodles: Cook according to package instructions, drain well, and keep warm.
  2. Brown Sausage: Crumble sausage in a pan with olive oil until browned, then remove and set aside.
  3. Caramelize Onion: Cook onion in sausage drippings until golden, then add seasonings.
  4. Add Peppers and Garlic: Saute peppers, add garlic, then pour in white wine and reduce.
  5. Combine Ingredients: Stir in diced tomatoes and sausage, simmer, then finish with olive oil, parsley, and basil.
  6. Combine with Noodles: Toss cooked noodles in the sauce, adjust seasoning, then serve garnished with basil.
