Ingredients:

  • 1 cup steel cut oats
  • 3 cups water
  • 1/2 cup pumpkin puree
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla
  • 1 teaspoon pumpkin pie spice
  • 1/4 cup maple syrup
  • 1/4 cup chopped walnuts or almond butter for topping (optional)

Instructions

  1. Add all the ingredients to the Instant Pot. Combine steel cut oats, water, pumpkin puree, salt, vanilla, pumpkin pie spice, and maple syrup in the Instant Pot.
  2. Close the lid and ensure the valve is in the sealing position. Secure the lid and set the valve to sealing.
  3. Pressure Cook for 4 minutes. Set the Instant Pot to ‘Pressure Cook’ mode for 4 minutes.
  4. Natural Release for 8 minutes. Allow the pressure to release naturally for 8 minutes.
  5. Quick Release any remaining pressure. After 8 minutes, move the valve to release any remaining pressure.
  6. Stir the oatmeal. Give the oatmeal a stir; it will thicken as it cools.
