Main Ingredients:
- 1 cup long grain white rice or jasmine (un-rinsed)
- 1 1/4 cups water
- 2 teaspoons olive oil

Instructions
- Add the rice and Seasoning: Add the rice, water, 1 teaspoon of olive oil, and salt to the Instant Pot. Stir to combine.
- Pressure Cook: Close the lid, set to high pressure for 3 minutes. Once done, allow a natural pressure release for 10 minutes.
- Fluff the Rice: Release any remaining pressure quickly, then fluff the rice with a fork.
- Prepare the Cilantro Lime Mixture: In a bowl, mix chopped cilantro, lime juice, and remaining olive oil.
- Combine and Serve: Add the cilantro lime mixture to the cooked rice and toss until well mixed. Serve hot and enjoy!
