This Hot Honey Ground Beef Bowl combines tender roasted sweet potatoes, seasoned ground beef, creamy cottage cheese, fresh avocado, and a drizzle of spicy-hot honey for a flavorful and satisfying meal perfect for a quick weeknight dinner or hearty lunch.

  • 1 1/2 lbs sweet potato (680 g), peeled and diced into ~1/4" cubes

Seasonings

Ground Beef

  • 1 lb 93/7 lean ground beef

Cooking Additions

  • 1 tbsp tomato paste (16 g)
  • 1 tbsp taco seasoning
  • 2 cups 2% low-fat cottage cheese (452 g)

Avocado

  • 4 small avocados (400 g)

Hot Honey

  • 2 tbsp hot honey (42 g)

Instructions

  1. Preheat oven and prepare sweet potatoes: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper. Toss the diced sweet potatoes with a light spray of cooking spray, salt, pepper, and a pinch of cinnamon. Spread evenly on the prepared baking sheet and roast for 30 minutes, flipping and seasoning halfway through for even cooking and flavor development.
  2. Cook the ground beef: While the sweet potatoes are roasting, heat a frying pan over medium-high heat. Add the ground beef and cook, breaking it into small pieces, until fully browned and cooked through, about 5 minutes. Drain excess liquid. Stir in tomato paste, taco seasoning, and a splash of water. Continue cooking for an additional 1-2 minutes, stirring to combine the flavors. Remove from heat.
  3. Assemble the bowls: Once everything is cooked, start assembling your bowls by dividing the roasted sweet potatoes, seasoned ground beef, cottage cheese, and sliced avocado evenly among four bowls. Finish with a drizzle of hot honey on each for a sweet and spicy kick.
