Ingredients for Honey Roasted Beets & Carrots:

  • 4 medium beets
  • 4 large carrots
  • 1 Tbsp. olive oil
  • 1/2 tsp. sea salt
  • 1 Tbsp. butter
  • 2 Tbsp. honey
  • 1 Tbsp. fresh herbs (thyme, rosemary, dill, etc.)

Instructions

  1. Preheat the oven: Preheat the oven to 450°F.
  2. Prepare the vegetables: Wash, peel, and chop the carrots and beets into 1/2 inch pieces.
  3. Toss with olive oil and salt: Coat the vegetables with olive oil and salt, then spread them on a baking sheet.
  4. Roast the vegetables: Roast at 450°F for 20-25 minutes until tender.
  5. Prepare the honey butter: Melt butter in the microwave, then whisk in honey.
  6. Coat vegetables with honey butter: Drizzle the honey butter over the roasted vegetables and toss to coat.
  7. Final roasting: Return to the oven for 5 minutes.
