  • 2 tbsp vegetable oil
  • 3-4 cloves garlic, minced
  • 1 tbsp ginger paste or grated fresh ginger
  • 4 tbsp honey
  • 1/4 tsp chilli flakes (optional)

Garnish

  • 2 green onions, sliced


Instructions

  1. Marinate Shrimp: In a medium bowl, combine light soy sauce and cornstarch, then add the peeled and deveined shrimp. Toss thoroughly to coat the shrimp evenly. Set aside to allow the shrimp to absorb the marinade, a technique called “velveting” that helps keep the shrimp tender and juicy during cooking.
  2. Cook Garlic and Ginger: Heat vegetable oil in a non-stick frying pan over medium heat. Add minced garlic and ginger paste, cooking for no longer than 30 seconds until fragrant but not browned to prevent bitterness.
  3. Cook Shrimp: Add the marinated shrimp to the pan. Cook the shrimp for 1-2 minutes on each side depending on their size, until they turn pink and opaque.
  4. Add Honey and Chili Flakes: Pour honey over the shrimp and sprinkle chilli flakes if using. Toss everything together quickly to coat the shrimp evenly and infuse them with the sweet and spicy flavors. Remove the pan from heat immediately after to prevent the honey from burning.
