Description

This Healthy Shepherd’s Pie recipe is a nutritious twist on the classic comfort food. With a flavorful ground turkey and veggie filling topped with a creamy cauliflower and potato mash, this dish is sure to be a hit with your family.

Topping:

  • 1 1/2 cups russet potatoes, peeled and chopped
  • 1 1/2 cups cauliflower florets
  • 1/2 cup grated parmesan cheese
  • 1 tablespoon olive oil
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1/2 cup low-sodium chicken broth

Filling:

  • 1 tablespoon olive oil
  • 1 lb ground turkey
  • 1 cup diced onion
  • 1 tablespoon minced garlic (about 2 garlic cloves)
  • 1/2 cup diced carrots
  • 1/4 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried rosemary
  • 1/2 teaspoon dried thyme
  • 1/2 cup low-sodium chicken stock
  • 1 tablespoon tomato paste
  • 1 cup peas
  • 1 cup corn

Instructions

  1. Preheat oven and prepare dish: Preheat the oven to 350 degrees F and grease an 8×8 or 9×13 casserole dish.
  2. Cook potatoes and cauliflower: Boil potatoes and cauliflower in a large pot of water for 10 minutes until soft.
  3. Prepare filling: Brown ground turkey in a pan with olive oil. Add onions, garlic, carrots, salt, pepper, rosemary, thyme, chicken stock, tomato paste, peas, and corn. Cook until combined.
  4. Mash the topping: Drain the cooked potatoes and cauliflower. Mash them in a bowl with olive oil, garlic powder, pepper, salt, chicken broth, and parmesan cheese.
  5. Assemble and bake: In the casserole dish, layer the turkey filling, top with the cauliflower/potato mixture, and bake at 350 degrees F for 30 minutes until golden brown.
