Ingredients
Scale
Ingredients
- 130 g peanut butter (or nut butter of choice)
- 250 g pitted dates (deglet nour or medjool dates)
- 2 tbsp cacao powder (or cocoa powder)
- 1 tbsp maple syrup
- 2-3 tbsp desiccated coconut
Instructions
- Prepare the mixture: Blend all the ingredients, except the desiccated coconut, in a food processor until they form a thick dough-like consistency. This ensures the dates and peanut butter combine evenly for a smooth texture.
- Shape the energy balls: Divide the mixture into 12 equal portions and use your hands to roll each portion into a round ball shape, making sure they are compact and smooth.
- Coat with coconut and chill: Spread the desiccated coconut evenly on a plate. Roll each energy ball in the coconut to coat the exterior. Place the coated balls in the refrigerator and chill for 30 to 60 minutes before serving to allow them to firm up and enhance their flavor.
Notes
- You can substitute peanut butter with any nut or seed butter of your choice for different flavors.
- If dates are too sticky, lightly dust your hands with coconut or cocoa powder when rolling.
- Store the energy balls in an airtight container in the refrigerator for up to one week.
- For a nut-free version, try using sunflower seed butter instead of peanut butter.
- Adjust the maple syrup amount based on your preferred sweetness level.
