Description
This healthy cottage cheese pasta bake with veggies is a delicious and nutritious meal that is easy to make. Loaded with penne pasta, broccoli, spinach, cottage cheese, and marinara sauce, topped with melted mozzarella cheese.

Pasta Bake:
- 3 cups penne pasta, dry
- 2 Tbsp olive oil
- 4 large cloves garlic, minced
Veggies:
- 2 cups broccoli florets
- 3 cups baby spinach
Additional:
- 2 cups cottage cheese, 2%MF
- 2 cups marinara sauce
- 1 cup shredded mozzarella
- Salt + pepper, to taste
- 5 large leaves fresh basil, chopped (to garnish)
Instructions
- PREP: Preheat oven to 400F. Bring a large pot of water to a boil. While you wait, chop broccoli into florets and mince garlic.
- Cook pasta to al dente, drain when finished.
- Heat olive oil in a pan over medium-high. Add minced garlic and broccoli florets, sauté for about 7 minutes. Add spinach and cook until it wilts. Remove from heat.
- Add cooked pasta, cooked broccoli and spinach, cottage cheese, and marinara sauce to a baking dish. Season with salt and pepper, stir until combined.
- Sprinkle shredded mozzarella over the top, coating the pasta evenly.
- Place baking dish in oven for 20 minutes, or until cheese is melted and browned. Garnish with fresh basil and serve hot!
