Description

This healthy cottage cheese pasta bake with veggies is a delicious and nutritious meal that is easy to make. Loaded with penne pasta, broccoli, spinach, cottage cheese, and marinara sauce, topped with melted mozzarella cheese.


Ingredients

Pasta Bake:

  • 3 cups penne pasta, dry
  • 2 Tbsp olive oil
  • 4 large cloves garlic, minced

Veggies:

  • 2 cups broccoli florets
  • 3 cups baby spinach

Additional:

  • 2 cups cottage cheese, 2%MF
  • 2 cups marinara sauce
  • 1 cup shredded mozzarella
  • Salt + pepper, to taste
  • 5 large leaves fresh basil, chopped (to garnish)

Instructions

  1. PREP: Preheat oven to 400F. Bring a large pot of water to a boil. While you wait, chop broccoli into florets and mince garlic.
  2. Cook pasta to al dente, drain when finished.
  3. Heat olive oil in a pan over medium-high. Add minced garlic and broccoli florets, sauté for about 7 minutes. Add spinach and cook until it wilts. Remove from heat.
  4. Add cooked pasta, cooked broccoli and spinach, cottage cheese, and marinara sauce to a baking dish. Season with salt and pepper, stir until combined.
  5. Sprinkle shredded mozzarella over the top, coating the pasta evenly.
  6. Place baking dish in oven for 20 minutes, or until cheese is melted and browned. Garnish with fresh basil and serve hot!
