Chicken and Broth
- 4 chicken breasts
- 1 tablespoon ghee or butter
- 4 cups water
- 4-5 cups chicken broth
Vegetables

- 1 yellow onion, finely chopped
- 2 large zucchinis, spiralized into noodles
Seasonings and Extras
- 2 tablespoons lemon juice
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 3/4 teaspoon poultry seasoning
- 1/2 teaspoon celery salt
Instructions
- Prepare Aromatics: Place a large pot or dutch oven over medium-high heat. Add ghee, minced garlic, and chopped onions. Stir and cook for about a minute until fragrant to release their flavors into the fat.
- Cook Chicken: Add the chicken breasts to the pot and pour in chicken broth and water to cover. Bring the mixture to a boil over medium-high heat, then reduce the heat to a simmer. Cover and cook for 20 minutes until the chicken is cooked through and tender.
- Prep Vegetables: While the chicken simmers, dice the celery and carrots thoroughly and spiralize the zucchinis into noodles (zoodles). This ensures all components are ready to be added in time.
- Add Vegetables and Seasonings: Stir in the lemon juice, salt, pepper, poultry seasoning, celery salt, diced celery, diced carrots, and zucchini noodles into the pot. Mix well with a large spoon to combine all flavors.
- Simmer Soup: Continue to simmer the soup for an additional 5-10 minutes to allow the vegetables to soften slightly and the flavors to meld together perfectly.
