Instructions

  1. Prepare Aromatics: Place a large pot or dutch oven over medium-high heat. Add ghee, minced garlic, and chopped onions. Stir and cook for about a minute until fragrant to release their flavors into the fat.
  2. Cook Chicken: Add the chicken breasts to the pot and pour in chicken broth and water to cover. Bring the mixture to a boil over medium-high heat, then reduce the heat to a simmer. Cover and cook for 20 minutes until the chicken is cooked through and tender.
  3. Prep Vegetables: While the chicken simmers, dice the celery and carrots thoroughly and spiralize the zucchinis into noodles (zoodles). This ensures all components are ready to be added in time.
  4. Add Vegetables and Seasonings: Stir in the lemon juice, salt, pepper, poultry seasoning, celery salt, diced celery, diced carrots, and zucchini noodles into the pot. Mix well with a large spoon to combine all flavors.
