Main Ingredients
- 1 cup oats
- 1 large apple, peeled and chopped
- 3 Tbsp honey
- 1 tsp vanilla extract
- 1 tsp cinnamon
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 3 tbsp yogurt
- 2 eggs
- 1 Tbsp butter or coconut oil
Instructions
- Preheat the oven: Preheat your oven to 180°C (350°F) to ensure it’s at the right temperature for baking the cake evenly.
- Prepare the batter: Put all the ingredients into a blender or use a hand blender in a bowl. Use only 3/4 of the oats at first and blend until smooth. Then gently fold in the remaining 1/4 cup of oats to give texture to the batter.
- Prepare the baking pan: Line a small baking pan with parchment paper to prevent sticking and make removing the cake easier.
- Bake the cake: Pour the oat and apple mixture into the lined pan and bake in the preheated oven for 20-30 minutes, or until a toothpick inserted in the center comes out clean.
- Cool and serve: Once baked, allow the cake to cool completely. Slice it, place the slices in an airtight container, and refrigerate for at least an hour. The cake’s flavor and texture improve with time in the fridge. Enjoy it for breakfast or as a healthy dessert option.
Notes
- The cake is naturally sweetened with honey, but you can adjust the amount to suit your taste or use maple syrup as a substitute.
- Using yogurt adds moisture and tenderness to the cake; Greek or regular yogurt both work well.
- Make sure to peel the apple before adding for a smoother texture; you can also grate the apple instead of chopping for a different texture.
- For a vegan version, substitute eggs with flax or chia eggs and use coconut oil instead of butter.
- Store the cake refrigerated in an airtight container for up to 3 days for optimal freshness.
