Description

For the Banana Bread:

  • 2 1/2 cups (500 g) mashed or pureed overripe bananas (from about 5-6 medium)
  • 1/4 cup melted coconut oil or avocado oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 3/4 cups (198 g) white whole wheat flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 1 teaspoon cinnamon
  • 1/2 cup mix-ins (optional; see notes)

Instructions

  1. Prepare the pans and preheat the air fryer: Lightly rub three mini loaf pans with butter or coconut oil. Preheat the air fryer to 320°F (160°C).
  2. Mash your bananas: Mash or puree the bananas in a medium bowl or blender.
  3. Mix in the remaining wet ingredients: Add oil, eggs, and vanilla; mix well.
  4. Combine the dry ingredients: Mix flour, baking powder, baking soda, salt, cinnamon, and any mix-ins.
  5. Bake the loaves: Divide batter between pans, air fry at 320°F for 17-21 minutes.
  6. Cool and enjoy: Let the loaves cool before slicing and serving.
