For the Banana Bread:
- 2 1/2 cups (500 g) mashed or pureed overripe bananas (from about 5-6 medium)
- 1/4 cup melted coconut oil or avocado oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 3/4 cups (198 g) white whole wheat flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon kosher salt
- 1 teaspoon cinnamon
- 1/2 cup mix-ins (optional; see notes)
Instructions
- Prepare the pans and preheat the air fryer: Lightly rub three mini loaf pans with butter or coconut oil. Preheat the air fryer to 320°F (160°C).
- Mash your bananas: Mash or puree the bananas in a medium bowl or blender.
- Mix in the remaining wet ingredients: Add oil, eggs, and vanilla; mix well.
- Combine the dry ingredients: Mix flour, baking powder, baking soda, salt, cinnamon, and any mix-ins.
- Bake the loaves: Divide batter between pans, air fry at 320°F for 17-21 minutes.
- Cool and enjoy: Let the loaves cool before slicing and serving.

- Feel free to add mix-ins such as nuts, chocolate chips, or dried fruit for extra flavor and texture.
