Bean Dip

  • 29 ounce can black beans, rinsed and drained
  • ¾ cup Ro-Tel Original, drained
  • ⅓ cup red onion, finely diced
  • 1 orange bell pepper, diced
  • 1 jalapeno, seeded and minced
  • ⅓ cup cilantro, chopped
  • 1 large clove garlic, minced
  • 1 lime, zested and juiced
  • ¾ teaspoon kosher salt
  • ½ teaspoon black pepper

Serve With

  • Blue corn tortilla chips


Instructions

  1. Combine Ingredients: In a large bowl, add the rinsed and drained black beans, drained Ro-Tel, finely diced red onion, diced orange bell pepper, minced jalapeno, chopped cilantro, minced garlic, and the zest and juice of one lime. Toss all these ingredients together to integrate the flavors.
  2. Season: Sprinkle ¾ teaspoon kosher salt and ½ teaspoon black pepper over the bean mixture. Mix well to ensure even seasoning.
  3. Adjust to Taste: Taste the bean dip and adjust seasonings if needed. You can add extra salt, pepper, lime juice, or even some hot sauce to enhance the flavor profile to your liking.
