Fudge Base

  • 2 cups granulated sugar
  • ¾ cup heavy cream

  • 1 jar (7 ounces) marshmallow cream
  • 1 teaspoon peppermint extract
  • 1 drop green gel food coloring

Instructions

  1. Prepare baking dish: Line an 8-inch square baking dish with parchment paper and set it aside for easy removal of fudge later.
  2. Mix chocolate ingredients: In a large mixing bowl, combine white chocolate morsels, marshmallow cream, peppermint extract, and green gel food coloring. Set aside.
  3. Cook sugar mixture: In a large heavy saucepan, add butter, heavy cream, sugar, and a pinch of salt. Bring to a boil over medium-high heat, stirring frequently. Once boiling, maintain the boil and stir constantly for 4 full minutes. Remove from heat.
  4. Combine mixtures: Pour the hot sugar mixture over the white chocolate mixture. Using an electric mixer, blend for about one minute until the chocolate morsels are melted and the mixture is smooth and uniform in color.
  5. Pour and garnish: Pour the fudge mixture into the prepared baking dish. Immediately sprinkle green sugar and red heart sprinkles on top, pressing them gently into the fudge surface.
  6. Set fudge: Refrigerate the fudge for at least two hours, or preferably overnight to firm up.
  7. Serve and store: Once set, cut the fudge into bite-sized pieces. Store in an airtight container at room temperature for up to two weeks. For best freshness, only cut the amount you will consume immediately and keep the remainder sealed.
