Ingredients
Scale
Cookie Dough
- 1 cup unsalted butter, softened
- 1 2/3 cup sugar
- 2 large eggs
- 1 tablespoon vanilla extract
- 6 drops bright green food coloring (add more for a greener hue)
- 3 cups all-purpose flour
- 1 teaspoon corn starch
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
Mix-ins
- 1 1/2 cup red and green M&Ms, plus an additional 1/2 cup for topping (optional)
Instructions
- Preheat Oven: Preheat your oven to 350° Fahrenheit and line a cookie sheet with parchment paper to prevent sticking.
- Cream Butter and Sugar: In a large bowl, combine the softened butter and sugar. Using an electric mixer, beat them together until the mixture is light, fluffy, and well-combined, which should take about one minute.
- Add Eggs: Crack in the eggs one at a time, beating thoroughly after adding each egg to ensure full incorporation.
- Mix in Vanilla and Food Coloring: Stir in the vanilla extract and green food coloring until the dough becomes evenly colored and vibrant.
- Combine Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, corn starch, baking powder, baking soda, and salt to evenly distribute all the dry components.
- Incorporate Dry Ingredients: Set the mixer to low speed and gradually add the dry ingredients into the butter mixture. Continue mixing until the dough just comes together and is well incorporated.
- Fold in M&Ms: Gently fold in the 1 1/2 cup of red and green M&Ms, reserving some for decorating the tops of the cookies.
- Shape Cookies: Using a cookie scoop or spoon, drop heaping 1 1/2 tablespoon-sized scoops of dough onto the prepared cookie sheets. For perfectly round cookies, roll each dough ball in your hands until smooth.
- Bake and Decorate: Place the cookies in the preheated oven and bake for 11-13 minutes. Immediately after removing from the oven, press additional M&Ms onto the tops of the warm cookies if desired for extra festive flair.
- Cool: Let the cookies cool completely on the baking sheet before transferring them to a wire rack or plate to prevent breaking.
Notes
- You can adjust the amount of green food coloring to achieve your preferred shade of green.
- Using parchment paper or silicone baking mats helps prevent sticking and aids in easy cleanup.
- For more festive results, consider adding a sprinkle of coarse sugar or Christmas-themed sprinkles on top along with the M&Ms.
- Make sure not to overbake to keep cookies soft and chewy.
- Store cookies in an airtight container at room temperature for up to 5 days.
