Ingredients

Units Scale

Dry Ingredients

  • 3 cups rolled oats
  • 1 1/2 cups Rice Krispies cereal
  • 1/2 cups graham crackers, crushed in pieces and crumbs
  • 1/2 teaspoon salt
  • 1/2 cup mini chocolate chips
  • 1/2 cup cereal marshmallows

Wet Ingredients

  • 6 tablespoons unsalted butter
  • 6 tablespoons packed brown sugar
  • 2/3 cup honey

Instructions

  1. Prepare the Pan: Spray an 8×8 inch pan with vegetable oil or baking spray and line just the bottom with parchment paper to prevent sticking.
  2. Make the Syrup: In a small saucepan over medium heat, add the butter, brown sugar, and honey. Whisk continuously until the mixture starts bubbling, then cook for exactly 2 more minutes for a rich, sticky consistency.
  3. Mix Dry Ingredients: In a large mixing bowl, combine the oats, Rice Krispies cereal, crushed graham crackers, and salt. Stir to distribute evenly.
  4. Combine Wet and Dry: Pour the hot butter mixture over the dry ingredients. Carefully whisk or fold to evenly coat all the ingredients. Allow the mixture to cool for about 20 minutes.
  5. Add Extras: Gently fold in the cereal marshmallows and mini chocolate chips until evenly dispersed.
  6. Press into Pan: Transfer the mixture into the prepared pan and gently press it down, slightly packing for firmness. Refrigerate for 2 hours to set.
  7. Slice and Serve: Once solidified, cut into 16 bars and enjoy!

Notes

  • Adjust the amount of chocolate chips and marshmallows according to your preference for sweetness.
  • If you prefer a chewier texture, refrigerate the bars for a longer period, up to 4 hours.
  • Store these granola bars in an airtight container at room temperature for up to 3 days or in the refrigerator for longer freshness.
  • You can substitute honey with maple syrup for a different flavor profile.
