Description

This Garlic Parmesan Shrimp recipe features succulent shrimp coated in a savory blend of Parmesan cheese, garlic, and paprika, then baked to perfection in a garlic butter sauce. It’s a quick and flavorful dish perfect for a weeknight dinner or entertaining guests. Serve it over rice for a gluten-free meal or with crusty bread to soak up the delicious garlic butter.

Ingredients

Units Scale

Shrimp

  • 2 pounds raw shrimp, 26/30 count, thawed (tails on, peeled and deveined, preferably Icy Ocean brand)

Seasoning Mix

  • 1 cup freshly grated Parmesan cheese
  • 2 teaspoons paprika (regular or sweet)
  • 3/4 teaspoon garlic powder
  • 2 tablespoons fresh parsley, chopped
  • Zest of 1/2 lemon

Other Ingredients

  • 4 tablespoons salted butter, melted
  • Juice of 1/2 lemon
  • Cooking spray (for greasing the baking sheet)

Instructions

  1. Preheat Oven and Prepare Baking Sheet: Preheat your oven to 400 degrees Fahrenheit and grease a rimmed baking sheet with cooking spray to prevent sticking.
  2. Prepare the Shrimp: If needed, thaw the shrimp under cold water. Ensure the shrimp are fully deveined by removing both inner and outer veins using a small knife, shrimp tool, or metal skewer. Rinse the shrimp thoroughly and wash your hands.
  3. Mix the Cheese Seasoning: On a dinner plate, combine the freshly grated Parmesan cheese, garlic powder, and paprika. Add the lemon zest from half a lemon and the chopped fresh parsley. Toss gently with a fork to evenly blend all ingredients.
  4. Melt the Butter: Melt the salted butter in a microwave-safe measuring cup. This will make it easier to coat the shrimp.
  5. Coat the Shrimp: Set up an assembly line: shrimp, melted butter, cheese seasoning, and baking sheet. Dip a few shrimp at a time into the melted butter, grasping by the tail, then dredge each shrimp in the cheese mixture to coat thoroughly on both sides. Place the coated shrimp onto the prepared baking sheet. Continue until all shrimp are coated and arranged evenly.
  6. Bake the Shrimp: Bake the shrimp in the preheated oven for 8 to 10 minutes, until cooked through but still tender. Avoid overcooking to prevent toughness.
  7. Finish and Serve: After baking, squeeze the juice of half a lemon over the shrimp to add brightness. Serve immediately over rice for a gluten-free option, or with crusty bread to dip in the flavorful garlic butter. Store any leftovers in the refrigerator for up to four days.

Notes

  • You can substitute sweet paprika with smoked paprika for a slightly different flavor.
  • Using freshly grated Parmesan cheese is key for optimal flavor and texture.
  • Cooking time may vary slightly depending on shrimp size; watch carefully to avoid overcooking.
  • Leftover shrimp should be stored in an airtight container and consumed within four days.
