Ingredients

Units Scale

Wet Ingredients

  • 1/4 cup butter
  • 3 cloves garlic, finely minced
  • 1 1/2 cups chicken broth or vegetable broth
  • 3/4 cup heavy cream
  • 1 cup Parmesan cheese, grated

Dry Ingredients

  • 1 tablespoon Italian seasoning
  • 1/4 cup flour
  • Kosher salt and pepper, to taste

Instructions

  1. Melt Butter: In a medium saucepan, melt the butter over medium-low heat, ensuring it does not brown.
  2. Cook Garlic and Seasoning: Add the minced garlic and Italian seasoning to the melted butter. Cook for about 1 minute until fragrant, stirring constantly to prevent burning.
  3. Make Roux: Whisk in the flour to form a smooth paste, cooking for about 1 minute to eliminate raw flour taste.
  4. Add Broth: Slowly pour in the chicken (or vegetable) broth while whisking continuously to prevent lumps. Continue whisking until the mixture is smooth and incorporated.
  5. Simmer to Thicken: Bring the mixture to a low simmer and cook for about 2 minutes until it begins to thicken.
  6. Add Cream and Cheese: Stir in the heavy cream and grated Parmesan cheese. Whisk until the cheese melts and the sauce becomes smooth and creamy, about 2–3 minutes.
  7. Season and Serve: Taste and season with salt and pepper as needed. Serve immediately over pasta, pizza, or as a dip.

Notes

  • For a gluten-free version, substitute the flour with cornstarch or a gluten-free flour blend.
  • To enhance flavor, add a pinch of red pepper flakes for a spicy kick.
  • Stir frequently to prevent the cheese from clumping or burning.
  • Best served fresh, but can be stored in an airtight container for up to 2 days and gently reheated.
  • Adjust the amount of garlic and Parmesan to taste for a stronger flavor.
